Freeze-dry explained

Freeze drying (also called as lyophilisation) is the process of evaporating (sublimate) ice from the frozen raw material at high vacuum and low temperature. By this, melting of the ice is avoided and the natural structure of the fruit will remain.

To date, it is the most gentle commercially available technology to preserve perishable foods.

With this process you can dehydrate almost anything what contains water:

  • fruits
  • vegetables
  • liquid blends
  • dairy produce
  • ready meals
  • even meat

The possibilities are endless.
